The Mother of All Quesadillas

-1 Corn Tortilla
-Refried Beans
-Cheese
-Beef
-Raw Sliced Mushrooms
-Spinach
-Jalapeños
-Oregano
-Basil
-Garlic Powder

Spread a thin layer of refried beans on one half of the opened tortilla. On top of it, put the beef cut up in small pieces. On top of the beef, put a healthy amount of garlic powder, then a light sprinkling of basil and oregano. On top of these put a couple pieces of sliced jalapeño then a thin layer of sliced mushrooms and on top of that thin layers of spinach and cheese. Fold the other side of the tortilla over onto it. Then put it on the panini press at 500 degrees until the tortilla has deep almost blackened lines in it and the tortilla has become pretty crisp. Then slice up into four sections cutting from the midpoint of the straight side of the tortilla. BOOM!

Mom’s Spinach

A LOT of spinach
Granulated Garlic
Salt
Butter
A tiny bit of lemon juice if you like that sort of thing

Take a plate. Fill it with spinach. Actually fill it… so it looks like a big dome. Sprinkle with granulated garlic to taste (a little goes a long way) and salt. Stick it in the microwave for 1:30. Remove from microwave, add about half of a pat of butter, and mix. Add a little sprinkle of lemon juice from if you like (from an actual lemon).

It tastes really, really good.

Pro Tip: Add parmesan cheese and crushed red pepper then add to your favorite spinach containing recipe.

Dessert Panini

2 slices of bread of choice
1 glob of peanut butter (crunchy or smooth)
1 handful of chocolate chips

On one slice of bread, evenly spread a thin layer of peanut butter. Evenly sprinkle chocolate chips over the peanut butter, and then cover with unused bread slice. Place in the panini press for approximately 1-2 minutes (timing highly variable and depends on amount of peanut butter used). Warning: it will get messy if left in the panini press for too long…trust me

Greek Pita

Greek Pita
Feta
Onions
Green Peppers
Tomatoes
Cucumbers
Olives
Olive Oil

Spread some olive oil on your pita
Put the plain pita into the panini machine and grill it until it gets a nice toasty color (or grill marks)
Cut it in half, place feta on the bottom and then pile the other ingredients on top
Put the top on and put the whole thing into the panini for a little bit longer, until the feta melts
Enjoy!

Pro Tip: Add your own Tzatziki sauce: yogurt, oregano, and lemon juice.

Ice Cream Sandwhich

2 chocolate chip cookies 
1 scoop of vanilla ice-cream
chocolate chips (or sprinkles if you are into that)

1. Heat two chocolate chip cookies in the microwave to make them soft and chewy
2. Place scoop of ice-cream in between cookies. Make it so that the scoop is flattened and fits well between the cookies with just a bit sticking out the sides
3. Roll the sandwich in a plate of chocolate chips until they are stuck to the sides
4. Enjoy!

Pro Tip: It is important to use hard ice cream, not soft-serve, and heat up the cookies beforehand or it will all come apart as soon as you try to bite it!

Crispy Pita Dessert Delight

1 slice Pita bread
.5-1 packet of butter
A sufficient dousing of honey
1 dash of cinnamon sugar
1 scoop of ice cream (optional)

Grab a slice o’ pita bread and run it through the toaster a couple of times, until it’s nice and crispy. Next, lather on a lil packaged butter and add honey. Now just sprinkle cinnamon sugar on top to your heart’s content. If you’re feeling particularly adventurous, throw a scoop of your favorite ice cream on top.

Pro Tip: Ice cream not optional.

Almost Purple Nurple

White Bread
Turkey
3 slices cheddar
3 pumps mayo
2 spoons garlic powder
Basil Flakes
1 tong jalapenos
Lettuce
4 Tomato Slices
2 drops lemon juice
Bacon and/or Guacamole (if available

1. Mix mayo, garlic powder, basil and lemon juice
2. Toast bread (reference settings above)
3. Liberally apply Garlic Basil Mayo to both slices of toast
4. Place turkey, two-layers thick on ceramic plate, about the size of your bread.
5. Dice jalapenos and uniformly spread over the turkey.
6. Layer 2-3 slices of cheddar cheese over turkey
7. Cover with a second small ceramic plate
8. Microwave for 40 seconds
9. Move turkey onto toast. Top with lettuce then tomato slices

Peanut Butter Waffles

Ross waffle
Peanut butter
Raisins or chocolate chips
Banana
Honey

1. Make a Ross waffle
2. Spread peanut butter on top of waffle (I prefer to mix both types of peanut butter)
3. Sprinkle raisins or chocolate chips (or both?) on top of waffle
4. Slice a banana and add to top of waffle
5. Drizzle honey over the whole thing

Egg McMidd

Two eggs made to order
Wholewheat English muffin
Salami
Cheddar cheese
Spinach
Tomato
Oregano
Basil

1. Order eggs
2. Toast English muffin
3. Stack eggs on bottom half of muffin
4. Add a sprinkle of oregano and basil
5. Place a slice of salami and cheese on top of eggs
6. Melt the cheese by placing the sandwich open-faced in the panini press, making sure to tilt the top of the panini press backwards so that the top of the press is not actually touching the cheese. This is very important!
7. Remove sandwich from panini press and add tomato and spinach
8. Place the top of the English muffin on top of the sandwich

Pro Tip: Microwave spinach for 30 seconds, then add to the Egg McMidd.

Thai Peanut Salad

2 cups lettuce
½ cup shredded carrot
8 cucumber slices
½ cup mushrooms

1.5 tbsp peanut butter
2 tsp sesame oil
½ tsp sriracha
½ tsp granulated garlic
1 tsp ginger
2 tbsp soy sauce
6 tbsp white wine vinegar
1 tbsp basil

Assemble salad.

Combine oil, peanut butter, garlic, ginger, and basil. stir until even. add soy sauce and vinegar. stir and apply to salad. 

Pro Tip: Share the dressing with friends. It makes multiple servings.
